So last Friday Miguel had a marketing teacher conference to attend in Denver so Vander and I tagged along. I took Vander to the ZOO while Miguel was in the conference and we had a blast, Vander loved every minute of it!! I think his favorite was the gorillas or the seal lions (which he called sharks). After the Zoo we picked Miguel up and headed for IKEA to get Vander a big boy bed since he is turning 2 soon. Vander loves his new bed.

3 Echeverria's 2 Yuma

For those of you who haven't heard we have moved to Yuma, Colorado. It is 700 miles from Cedar City and 45 miles from Nebraska and Kansas. Miguel has a job teaching business at the high school here and we are excited to have a job and embark on a new adventure. Miguel is almost done with his first week of teaching business at Yuma High School, He is doing great. Vander and I have been here for almost a week and we are slowly adjusting. Today Vander and I rode our bikes around town (well technically I pulled him on my bike). Living in a rural community is different. Most stores are closed by 6 a few are open until 9, some are only open on Thursday, Friday and Saturday. Grocery's are expensive, and the closest Wal-Mart is an hour away. We are planing a trip to Wal-Mart for tomorrow and I am really excited (isn't that sad). The weather is pretty normal, it was crazy the first few nights there were lightning storms and I was afraid there would be a tornado, but there has not been a tornado in Yuma for a hundred years. It is a little more humid than Utah and just as hot. One of the first things we bought was a swamp cooler. Our new house is very nice it is much larger than I am used to and I need to get some furniture. I am going to hit up a few yard sales tomorrow and see if I can find some treasures. Well here is what you really want some pictures enjoy.

This is the park right by out house, So great to have a place Vander and I can walk to and play. I forgot to mention that we drove here in one day 13 hours in a U-Hal. Here is a picture of my dad and Vander when we first got on the road. The following picture was taken when we were almost to Yuma. Notice the difference.

This is main street, there is 3 restaurants, 2 thrift stores, 1 grocery store, a hardware store, and radio shack all with in walking distance of our house.

Adventures in Cedar City

We have been on a few fun adventures lately. We went up the canyon and roasted hot dogs and marshmallows. Then we went to navajo Lake to go fishing. We have been playing the grandma and grandpas backyard in the splash pool and going to the lake on the hill to cool off and play in the sand. Here are some pictures enjoy!!

Who Loves Aussie Bites?

Vander is kind of a picky eater and I try really hard to find nutritious snacks for him to munch on, one of his favorites is Aussie Bites. They have been described as granola muffins, made with whole wheat flour, rolled oats, flax seed, coconut and dried fruit. You can get them at Costco, but now that we live in Cedar City there is not a Costco down the street so our Aussie bite supply has run dry. However there is light at the end of the tunnel a quick google search recovered several recipes for Aussie bites- so I decided to make some. They turned out great, possibly better than the ones from Costco (because we got to eat them warm). Anyways here is the recipe and in true food blog style some photos. Enjoy.

AUSSIE BITES

Adapted from Costco 

Makes 50 mini muffins

Ingredients:

▪ 2 cups rolled oats

▪ 2 cups whole wheat pastry flour

▪ 2/3 cup brown sugar

▪ 1 1/4 cups shredded coconut

▪ 1/2 cup raw sunflower seeds

▪ 1/4 cup flaxseeds

▪ 1/4 cup toasted wheat germ

▪ 1 cup finely chopped dried fruit (apricots, raisins, dates, figs, cranberries, etc.)

▪ 1/4 cup honey

▪ 1/2 teaspoon vanilla

▪ 1 cup (2 sticks) unsalted butter

▪ 1 teaspoon baking soda

▪ 1 teaspoon salt

▪ 2 tablespoons hot water

▪ 3 eggs, beaten

Directions:

1. Preheat oven to 350F.

2. Stir dry ingredients together in a bowl.

3. Melt honey and butter together. Mix baking soda and salt with hot water and add to butter mixture. Stir in vanilla. Combine butter mixture with dry ingredients, add eggs, and mix well.

4. Use a tablespoon to drop the batter into lined or lightly-greased mini muffin tins. Flatten the tops. Bake for 10-12 minutes at 350F or until golden. Remove from oven and let cool in pan for 5 minutes; finish cooling on wire racks.

It has been awhile since we updated our blog. A lot has happened Christmas,a surprise visit, 2011, moved back to cedar city and spring fever. Here are some picture to catch you up

Miguels brother is living in Madison, WI so we decided to go visit them for Thanksgiving. We had so much fun and it was warmer in Wisconsin than it was in Utah. Here are a few photos of our adventure.

Vanders hair has never been cut and it was getting really long and shaggy. Miguel and I decided it was time for a real hair cut so we put him in his high chair and got out the clippers.

We have been in SLC for 3 months now and here is what we have been up to...

1 Step at a Time

We have Moved. We now live in Salt Lake City eagerly awaiting Aug 23 when Miguel starts student teaching at West High School. We have been here just over a week and are pretty settled in. Vander is growing so fast he took his first steps a few days ago and we were lucky enough to get it on video. Enjoy. We miss you Cedar City family.

Life in the Windy City

It has been windy here in Cedar for the last 4 days, I am not a big fan of the wind. May has been a busy month for us we had 3 weddings and a funeral. Miguel completed the secondary block during maymester he was in school from 9 to 4:30 everyday for 3 weeks. All that is left is an online class and student teaching in August!!! Vander is crawling and standing up on everything, its like he went from a baby to a toddler overnight, so crazy. I keep myself busy with crafts, for mothers day I sewed aprons. I have been working on an afghan using all my random scrap yarn, its not very pretty but it will make a great picnic blanket. We also got a new fish our first pet! Here are some photos of our life. Merry Christmas

We decided it would be easier to send out a Christmas email than a Christmas card. We had Jeremy (Miguel's brother) take some pictures of our little family and they turned our great here is our favorite...

Vander has been growing so fast he is almost 3 months old. We love having him around he makes us laugh every day. We could not decided what he should be for Halloween so he was a skeleton for part of the day and a frog for the other part. Here is Vander the Frog...

Everyone thinks that Vander looks just like Miguel, We can decide who he looks like. But Vander sure does love his daddy, he wants to be just like him....

Our life has changed for the better with the addition of Vander. I am able to stay home with him full time and we have a lot of fun playing and going on walks during the day. Miguel is working and going to school at Southern Utah University. He is getting close to graduation only one more semester and then student teaching (he is going to be a business teacher in middle or high school). We hope that all of you are well this Christmas season, we would like to leave you with this thought from Henry B. Eyring

The Sequoia Branch

We wanted to attend church while on our adventure so I looked up the closest meeting house to Sequoia it was in Dunlap, Ca which was only 42 miles away. What we didn't know was that it was 42 miles of winding canyon road. It took us a few hours to get there, but it was well worth it. The drive was beautiful and the people of the Branch were so friendly we even got dinner (they were having a linger longer)!!

It was freezing in Sequoia so I wore long johns all the time, even under my church dress. P.S. I took them off once we got to church I also took off the ugg boots and replaced them with nice shoes.

Bear Country

Sequoia National Park is Bear Country so we had to keep anything with a sent in this bear proof container. There were pictures posted all over of cars that had be destroyed by bears because people had left food or shampoo in them. So we obeyed the rules and put every thing in the bear proof container even thought its squealed like crazy every time you opened it.
